If you have been following this blog for a while you will know that in the Forage house hold at Easter time we indulge in Figolli a Maltese Easter cake/biscuit instead of copious amount of chocolate (we still manage eat our way through some chocolate eggs too).....
However, If you are new to the Forage's Blog catch up and read last year's Easter post which also has the recipe for Figolli Maltese Easter Cake/Biscuit.
This year I branched out and fully decorated my Figolli.....
Traditionally Figolli is beautifully decorated with royal icing and the shapes of the biscuit can range from mermaids, heart shaped to a appropriate themed Easter egg. In Malta you can purchase figolli cutters, which make is so much more easier, when not in Malta you can use cookie cutters.
I have made a butterfly shaped one using a paper template and cutting round it with a sharp knife. I also made a dragonfly shape figolli but I broke it when sliding it onto the cooling rack.
So here it is..... Ok I'm no artist but my daughter loves it!!

Sunday Kitchen- Food to Share
Sunday
Kitchen- Food to share this summer!
This week’s recipes are perfect for
sharing either partnered with a platter of fresh crudités or a selection of
meats and cheese. Also ideal for picnics and perfect accompanying a BBQ meal
alfresco with the sun shining bright and warm, and a glass of cold Pimms.......
(OK, I can only dream at the moment...... But it is supposed to be a hot summer
this year.....)
This Sunday kitchen- there is 4 simple,
delicious and summery recipes to stimulate your taste buds;
*Aubergine (Eggplant) and Chickpea
dip
*Fresh tomato dip/salsa
*Warm courgette (zucchini) and
haloumi salad
*Stuffed French bread/baguette
(All dishes should serve
approximately 4-6 people sharing)
Aubergine (Eggplant) & Chickpea
Dip
Ingredients:
2 medium
Aubergines (eggplants)
Lemon juice
from 1 lemon
250grams of
chickpeas (Dried/canned)
1 tablespoon
of peanut butter (smooth/crunchy)
1 bulb of
roasted garlic
1 tablespoon
of sesame oil
1 teaspoon
cumin
1 teaspoon
smoked paprika
1 tablespoon
natural yoghurt
Coriander (a
small bunch) roughly chopped
Olive oil
approx 2 tablespoons
Method:
Rub olive
oil over 2 aubergines (I also prick the aubergines with a fork to avoid an
aubergine explosion) and roast in the oven till tender with the whole garlic
bulb drizzled with olive oil (approx 45mins -1 hour).
Once cool
slice in half and scoop out flesh of aubergine and squeeze the garlic out of
each clove. (Roasting garlic takes out the sometimes harsh flavour of raw
garlic, it becomes sweet and smoky with the subtle flavours garlic- it is also
delicious squeeze onto fresh crusty bread with goats cheese Mmmmm)
If using
dried chickpeas you’ll need to soak overnight and cook as per pack
instructions. With canned chickpeas drain and rinse thoroughly. Put all
ingredients except the sesame oil, yoghurt and coriander into food processor
and whiz till smooth and well combined and season with salt and pepper.
Place in serving dish and add yoghurt, roughly
chopped coriander and drizzle with sesame oil.
This dish
can be prepared the night ahead, leave in fridge and avoid adding coriander,
youghurt and sesame oil till ready to serve.
*variation:
use tahini paste instead of peanut butter.
Fresh tomato dip/salsa
Ingredients:
4 large vine
tomatoes
1 red onion
1 cloves
garlic crushed
A bunch of
basil and parsley
Salt and
pepper
2 tablespoon
Olive oil
1 teaspoon
of brown sugar
Balsamic
vinegar
Method:
Peel and
chop tomatoes up roughly. (To peel tomatoes, place the tomatoes in boiling
water for a few minutes till skin starts to blister then remove and place into
icy cold water and peel)
Finely dice
onions, add to tomatoes with crushed garlic and the roughly tear up basil and
parsley and mix. Season, add
olive oil and balsamic vinegar.
This can be
made a day ahead of time, cover and place in fridge. Avoid adding olive oil and
balsamic vinegar until ready to serve.
*variation:
add fresh mango and hot fresh chilli for a real summer salsa dish. I also use
recipe as a topping for bruschett, I just omit balsamic vinegar.
Warm courgette (zucchini) &
haloumi salad
Ingredients:
2 courgettes
1 haloumi
cheese
2 cloves of
garlic
Juice of 2
lemons
Approx 4
tablespoons of olive oil
Parsley to
garnish
Cracked pepper
Method:
Firstly make
dressing by whisking up olive oil, lemon juice and minced garlic. Season with pepper
(avoid using salt as the cheese is quite salty).
Slice
courgettes lengthways approx 5mm-10mm add to dressing. Slice haloumi approx 5mm
thickness (it may crumble or break but not a problem) also add to dressing to
marinate in the fridge for a minimum of 1 hour.
Heat a non
stick frying pan or griddle and fry courgette and haloumi slice for approximately
30 seconds on each side. (Fry just before serving)
Dress with
the remaining dressing and garnish with parsley.
Stuffed French bread/baguette
Ingredients:
A whole
French bread stick
2 stalks of
celery
Half
red/yellow pepper (capsicum)
1 cup of Sour
cream
2 hardboiled egg roughly chopped
½ Cup of
grated mature/strong cheddar cheese
Small bunch
of chopped parsley
2 Spring
onions finely chopped
Cracked
pepper
Method:
Hollow out
the inside of the French bread leaving approx 1cm thickness, it’s easier if cut
the French stick in half and hollow the 2 halves. (Don’t discard the inside of the bread save
and use as either croutons, breadcrumbs or to thicken up soups)
To make
filling, dice celery, pepper, slice spring onion and chop hard boiled eggs add
to a bowl. Add all other ingredients and mix well.
Stuff
filling into hollowed out French bread and slice into individual portions.
And here is
hoping summer is on its way.....

Figolli -Maltese Easter cake/biscuit
Figolli -Maltese
Easter cake/biscuit
When my brother and I were young , Easter was not about
getting excited receiving copious amounts of chocolate Easter eggs, instead it
was eating ‘Figolli’ a Maltese Easter cake.
Since having a child of my own and living away from my
Australian/Maltese family – it’s become more important for me to carry on the Figolli
tradition for my own family (..but mostly, because it’s delicious!).
Ingredients;
300gram self-raising flour
200grams caster sugar
200grams butter
2 Eggs
Zest of 1 lemon and juice
Icing sugar for dusting
Milk (if dough is too dry)
FILLING;
Strawberry jam (or whatever flavour you prefer)
250 grams ground almonds
½ teaspoon almond essence
100grams sugar
100mls of water
Method
Rub butter into the flour. Beat eggs lightly and mix with
sugar, lemon juice and zest.
Combine egg mixture with flour and butter. Form into a dough
and if to dry add a little milk. Place into the fridge until ready to use.
For the filling; mix sugar and water in a saucepan and bring to boil. Add
essence and simmer for a few minutes.
Then add ground almonds and stir well. Once fully combined remove from
heat and set aside to cool.
Pre-heat oven at gas mark 4/ 180 C/ 350 F.
Roll out pastry and cut to 2 identical shapes (I used the
bottom of a cake tin- also you could make small individual cakes by using
cookie cutters).
Spread a thin layer of jam and on top of that the almond
filling. (I press the filling flat using finger tips.)
Place the second layer of pastry on top and seal the edges together,
also rub the edges with water to create a complete seal.
Bake for 12-15 minutes
or until golden brown.
Leave to cool and then decorate with a sprinkle of icing
sugar.
If you are feeling really adventurous decorate
with royal icing and Easter eggs!

Peanut butter and coconut cookies
Grey and wet weekends usually means baking time in the Forage household, both Mrs Forage and Toddler Forage love to cook and bake- so any excuse!
These cookies are delicious but beware they are very decadent and calorific, importantly the are very yummy but you have been warned! :)
Peanut butter and coconut cookies
Ingredients:
185grams of plain flour
80grams self-raising flour
80grams of desiccated coconut
125grams of unsalted butter
110grams caster sugar
120grams honey
2 heaped tablespoons of peanut butter
METHOD
1) Pre-heat oven 180 degrees (gas mark 4/ 350F). Grease or line with baking paper, 2 baking trays.
2) Sift flour and add coconut in a large mixing bowl.
3) Combine the butter, sugar, honey and peanut butter into a saucepan and melt over a medium heat.
4) Once melted combine with flour mixture and with a metal spoon just until completely mixed through.
5) Scoop up approximately 1 tablespoon of mixture and roll, place on tray and flatten (I use a fork to flatten)
6) Bake for 10 minutes or till golden brown. Then leave to cool on tray and ENJOY!!
STORAGE: store for up to 4 days in air tight container.

Vegan Chocolate Chilli Muffins (Gluten Free too!)

My sister in law was looking for a good Vegan and Gluten free recipe recently as she was looking into starting a catering business, designed for the Gluten intolerant. So after much trial and error, I came up with this recipe - the cakes are just as tasty as regular Muffins and deliciously moist :) Let us know how you go if you give it a crack :)
Vegan Chilli Chocolate Muffins
Makes 12
DRY INGREDIENTS
1 Cup of gluten free plain flour
2 tbs cocoa powder
3 tbs arrowroot
1 tsp bicarbonate soda
1 tsp baking powder
1 tsp cinnamon
1 cup of brown sugar
1 to 1 1/2 tsp chili powder (add 1 teaspoon then taste and add extra if desired)
1 teaspoon of instant coffee
pinch of sea salt
WET INGREDIENTS
140g of sweet potato puree (approx 1 med sweet potato cooked in microwave for 5 Min's till soft then remove skin and puree)
100g dark good quality chocolate (Needs to be good quality for it to be suitable for vegans- check to make sure that there are no milk solids in chocolate)
juice of 1 orange
1 an 1/2 cup of chocolate soy milk
METHOD
1. Pre-heat oven gas mark 4, 180C Degrees, 350F Degrees and place muffin cases in tin.
2. Melt chocolate by placing large heat proof bowl over a pan of simmering water.
3. Prick the outside of sweet potato and microwave for approximately 5 Min's till soft. Keep an eye on the sweet potato as you don't want it to over cook and burn. Remove skin and weigh approx 140g of flesh (usually 1 medium size sweet potato).
Place flesh into food processor with the juice of one orange, only 1 cup of chocolate soy milk (reserve 1/2 cup of milk for later) and mix.
4. Once chocolate is melted, take off the heat and let it cool slightly then add to wet ingredients in mixer and mix for about 2 Min's. Mixture should be mousse like in texture.
5. Sift flour, arrowroot, bicarb soda, baking powder, cinnamon, cocoa powder and chili into a mixing bowl.
6. Add 1 cup of brown sugar, teaspoon of coffee and pinch of salt mix with a spoon.
7. Then add wet ingredient to dry and add the rest of the milk and stir through evenly.
8. Once mixed taste to see if extra 1/2 spoon of chili is required.
9. Spoon into 12 large muffin case till bout 3/4 full and sprinkle with brown sugar (optional).
10. Bake for 25-30 Min's.
11. Let to cool then enjoy!
